hackrf_transfer stores samples in 8 bit signed IQ format.  It should
be straight forward to read them in to Matlab (or GNU Octave).  The
GNU Radio wiki has a few tips too:

If you want to process it in real time then you could use a named pipe
to get the data in to Matlab/Octave.
